Rich Chocolate Cake Recipe

• ¾ cup cocoa
• 100g dark cooking chocolate
• 2cups boiling water
• 1cup butter, softened
• 2 ½ cups castor sugar
• 4 eggs
• 1 ½ tsp vanilla essence
• 2 ¼ cups standard flour
• 2tsp baking soda
• ½ tsp baking powder
• ½ tsp salt

Chocolate Icing
• ½ cup Cocoa
• 2 ½ cup powdered sugar
• 1/3 cup milk
• 1tsp vanilla essence
• ¼ cup butter, softened
• Strawberries
• Whipped Cream


Preheat oven at 180 degrees Celsius

Combine the cocoa, chocolate and water. Stir until smooth. Set aside to cool. Cream butter and sugar together, add vanilla essence and beat in eggs one at a time till light and fluffy.

Combine flour, soda, baking powder and salt. Add to creamed mixture alternately with cocoa mixture.

Fold together all ingredients and pour into a prepared 9 inch x 1 ½ inch round tin.

Place into the oven and bake for 30 to 35 minutes. Check cake by placing a knife into the centre of the cake after 30 minutes. If the knife comes out clean then the cake is ready.

For the icing sift the icing sugar and cocoa together. Blend in remaining ingredients until smooth.

Spread the icing over the cake evenly and allow to set. Garnish with whipped cream and chocolate-coated strawberries.
